Eggplant & Amazake Sauce




Eggplant served with a simple amazake sauce you can prepare in advance and store. The recipe is from one of my all-time favourite cook books: 野菜料理とヘルシーソース(Vegetable Cuisine and Healthy Sauces).


  • Amazake Sauce
  • 1 cup amazake

  • 1/2 cup soy sauce

  • ground piece of fresh ginger root

  • 1 ground clove of garlic

  • 2 tsp sesame seeds

  • Eggplants
  • 4 small eggplants

  • optional: chopped spring onion


  • Amazake Sauce
  • Mix all ingredients.
  • Eggplants
  • Cut incisions into eggplant.
  • Steam until tender.
  • Cover with amazake sauce and spring onion.
