Gochujang Eggplant & Feta

one eggplant
2 Tbsp gochujang
2 tsp date syrup
1 tsp sesame oil
1 tsp sesame seeds
100g feta cheese
Directions
- Cut eggplant in half and cut grid pattern.
- Heat up both sides in frying pan with a bit of sesame oil, add some water and cover with lid.
- Mix gochujang, date syrup, sesame oil and sesame seeds and glaze the eggplants.
- Heat up in oven for a few minutes.
- Add feta and enjoy!
