Cherry blossom cookies with strawberry yogurt flavour. 苺ヨーグルトの桜クッキー。🌸

These cookies owe their bright pink colour and intense strawberry aroma to a special natural ingredient: freeze-dried red berries.
I suggest serving the cherry blossom cookies with a cup of hot vanilla-scented black tea. Enjoy!
Recipe for Pink Cherry Blossom Cookies with Strawberry Yogurt Flavour
(makes 2 baking trays full of cookies)
125g butter, room temperature
100g sugar
1 egg
4 Tbs strawberry yoghurt
about 30g whole freeze-dried berries or 20g freeze-dried berry powder
300g all-purpose flour
25g cornstarch
1/4 tsp baking powder
1/2 tsp salt
a round cookie cutter squished to an almond shape

Preheat oven to 150°C.
First, beat butter and sugar. Then add the egg and yoghurt and beat well.
If you are using whole freeze-dried berries, grind them and sieve the powder to remove the seeds.
Combine freeze-dried berry powder, flour, cornstarch, baking powder and salt and sift everything into the butter mixture. Knead well. At this point you’re supposed to notice a fruity fragrance. Divide the dough in two and refrigerate for about an hour.
Roll the dough to a thickness of 0.5cm.
Cut out cherry blossom petals with your cookie cutter by overlapping the pattern like shown in the pictures.
Bake for 20-25 minutes.
Voilà, pink cherry blossom cookies! Let them cool down before serving.

Nukazuke with cucumbers, carrots and turnips. きゅうり・人参・かぶ・ぬか漬け。🥒🥕
This is a bed for nukazuke method fermentation, a so called nukadoko!
It's made from the outer shell of the rice grain that is left, the rice bran. You basically add water and salt and some veggie waste to kickstart the process. You can burry vegetables and fruits and after a few hours, take them out, wash the bran residue off and they are ready to eat! Tasty, nutritious and colonized with healthy bacteria. You can keep the rice bran mash forever if you take good care of it. You need to feed it with vegetables and stir it with your hands 👐 everyday or every few days, depending on what temperature you keep it at. The nukazuke method dates back to 17th century Japan!
Apart from the core ingredients, we added kombu kelp, Korean red pepper, koji rice, beer, garlic, ginger and wheat bran. This adds flavour to the nuka bed and supports the fermentation process while keeping harmful microorganisms at bay.

Grilled Miso Nuts "Cheese" Mushrooms. 焼き味噌ナッツもどきチーズキノコ。🍄
This spreadable miso nuts "cheese" is super delicious and easy to make. You can bake it in the oven on top of veggies or bread and it gets a nice crust. You can also mix it with hot pasta for a simple meal.
Use nut butter as a base. I recommend almond or cashew. You add as much miso as you like. Depending on the salt level of the miso, you may prefer to add more or less. Approximately, you could go for 1 tsp miso per 2 Tbsp nut butter. Then you add a dab of finely grated garlic and a dab of sweetener, e.g. pear syrup, maple syrup, honey or whatever. Optionally, you can add nutritional yeast and nutmeg to bring out the cheesiness even more.
I used a homemade 1-month old chickpea miso for this that I created with a low salt ratio. The flavour worked nice in this "cheese" and I was able to add more volume than with standard miso because of the reduced salt content.
I removed the stem from champignon mushrooms and filled the whole with the "cheese" mix. Baked it on the top shelf of the oven for 10-15 minutes. So easy, so delicious.

Celery Shio Koji. セロリ塩麹。💚
A fermented condiment made from koji rice, pureed celery stalk and salt.
Classic shio koji using only koji rice, water and salt is already delicious on its own, but I figured that replacing the water with celery could result in an even more intense level of umami. Turns out that's true!
You can use celery shio koji to coat oven-roasted root veggies, add flavor-magic to soups and salad dressings or use as a marinade for basically anything.
INGREDIENTS
300g koji rice
100g salt
300g raw celery stalks, pureed
STEPS
Mix all ingredients together and keep at a temperature of 55°C for 8 hours (I used my electric rice cooker for this). Stir every few hours. Alternatively, keep at room temperature for 1-2 weeks.
The celery shio koji is ready when the salt has dissolved and the rice grains are soft and can easily be crushed with the tips of your finger. If preferred, the mixture can be blended into a smooth paste. Can be stored in the fridge for up to 6 months.

Daikon marinated short-term with salt and beetroot juice, slices and shaped into a rose. Simple but beautiful. Edible gradient colour roses! 🌹😘

I made these roses 12 years ago on Valentine's Day 😅 Let me share the steps!
How to make it:
One piece of raw, peeled daikon
1 Tbsp salt
1 cup red beetroot juice
Rub all sides of the radish with the salt. Let sit for an hour to draw out the water. This will make the radish softer and it will absorb the beet juice easier (at least that’s what I’m guessing).
Wash the salt away and place the radish in a bowl. Pour in the beet juice and let it stand for 30-60 minutes. If the beet juice doesn’t cover the whole radish, rotate it once a while.
Take the radish out of the juice and pat it dry with a kitchen paper. Cut thin slices and lay 6 of them out like shown in the picture. Roll! Cut the roll. Now you have two roses.

If you're looking for an easy, last-minute Valentine's Day gift for someone that prefers veggies over chocolate and flowers, THIS IS IT! 😄
I have not tried this in the past, so I am not sure how it will turn out tastewise. I hope it's fine to eat after a week or so. Some years ago, I discovered that datterini tomatoes can be easily cut to look like a heart. I figured therefore, they could be translated into a neat Valentine's Day ferment, playing with their natural shape and colour.
Some tips:
The longer the tomatoes, the easier it is to cut them at the right angle to get them looking like a heart in the end. 🍅
Cut the skewer to a length that is as long as the jar diagonal. It will help fixing the skewer between the bottom and the lid, so the tomato will stay submerged. If your skewer is to short, the tomato will float to the top. The skewer also helps keeping the basil leaves down. 🌊
A larger jar with flat areas will make the hearts look better. I guess this is connected to surface refraction. 💕
